Yelloweye rockfish (Sebastes ruberrimus) is a premium rockfish that has a firm texture that makes it suitable for a wide range of cooking methods. As Chef Erik Slater of the Seward Brewing Company notes, "Meaty and flaky, it's perfect for frying and makes the best beer battered fish for Baja style tacos. I also like just grilling it with a mix of soy sauce, butter, and garlic." It's also perfect for steaming, poaching, and sautéing. This cajun rockfish recipe is a great place to start.
Yelloweye rockfish also make the very best fish tacos and this Alaskan rockfish tacos recipe is our very favorite. Another beloved favorite here is this oven-fried rockfish and chips recipe from fisherman Jacquie Foss. Check out other rockfish recipes for inspiration here.
3 ounces of rockfish contains 19 grams of proteins (38% of daily value), 293 mg of omega-3 DHA and EPA, 3.9 mcg of vitamin D (26% of daily value), and 65 mcg of selenium (118% of daily value). It is another nutritional powerhouse in our lineup.
Some call yelloweye “rock cod” or “red snapper,” but it’s not to be confused with the smaller red snapper found much further south in more tropical latitudes.
Of the 37 rockfish species living in the waters of southeast Alaska, yelloweye rockfish are among the largest, making for really nice portions. Portions are 5-7 ounces, frozen, individually vacuum-sealed, skinless, and boneless.
