
Some of our fishermen prefer rockfish to halibut.
Mild with a steak-y texture and sweet flavor, our Alaska Gold Rockfish is a crowd-pleaser. And I've heard a number of our fishermen say that they enjoy rockfish as much or more than halibut. Rockfish, in our humble opinion, makes both the best fish tacos (black cod is also excellent) and also fish n' chips. Our Alaska Gold Rockfish is delicious grilled, broiled, sauteed, steamed, made into ceviche, or baked with a little blackening seasoning.
One easy and delicious recipe we do at home with our rockfish is a Cajun blackened rockfish. This recipe is a game-changer, and you can modify to your tastes.
Ingredients
3 tablespoons butter
1/2 large yellow onion chopped
1 red bell pepper chopped
1 stalk celery chopped
1.5 cups long grain white rice
3 cups chicken broth
2 teaspoons kosher salt
2 teaspoons paprika
2 teaspoons onion powder
1.5 teaspoons kosher salt
1 teaspoon dried thyme
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried oregano
1/2 teaspoon cayenne pepper (instead of mixing the above seasonings which you might have in your pantry, you can just use store-bought blackening seasonings)
1 package Alaska Gold rockfish fillets
3 tablespoons vegetable oil
Instructions
Start with the rice by pre-heating oven to 375F. In large sauté pan, heat butter over medium until melted then add onion, red pepper and celery and cook until softened (4-5 minutes). Then add rice to pan and stir, toasting it for about 2 minutes. Stir in chicken broth and bring to simmer. Then cover the pan with a tight-fitting lid and transfer the pan to preheated oven to bake for about 25 minutes.
Next work on the fish. Mix up the seasonings. Sprinkle and pat down these seasonings on the rockfish after wiping it down with a paper towel. Then do a high sear for about 3 minutes per side. Heat up the non-stick pan beforehand. We use a cast iron skillet for this and a Dutch oven for the rice.
The above recipe can work well with other whitefish like our lingcod or halibut, but give our rockfish a try.
