On the west coast, we call rockfish...well...rockfish. On the east coast and other parts, people might know this wide range of species (there are over 30 Alaska rockfish species) as "sea bass" or rock cod or snapper. Rockfish is neither a bass, cod or snapper, but is a classic example of an underrated seafood item. If you're on a budget and are looking for a tasty way to get all the health benefits of seafood, rockfish is a great entry point. In addition, we find that people that don't like seafood appreciate rockfish for its steak-like texture and mild, sweet flavor. Rockfish are also very popular in Asian markets. In addition to baking or sautéing, we recommend steaming these rockfish in an Asian style with sesame-soy stir-fried greens. Rockfish have an open cell structure and take marinades well.
These are random-sized vacuum-sealed fillets and each fillet could be between 10 and 16 ounces in size. Each vacuum-sealed fillet is boneless and skinless. Each box is 10 pounds of these random-sized fillets. There are over 40 species of Rockfish on the West Coast. Most of our Rockfish will be Shortraker or Yelloweye.
