The collar is perhaps the most succulent part of a king salmon. It is a delicate triangle of extremely tender, fatty morsel tucked just below the gills. Our King Salmon Collars are very juicy and super fatty. You could think of them as being like chicken thighs or chicken wings, but that would not do them justice, as they are loaded with healthy omega-3 fatty acids and goodness. Salmon collars are also a great source of collagens, which are good for healthy joints and more.
Because of their juicy fattiness, the salmon collars are not nearly as sensitive to overcooking as a salmon fillet. We recommend marinating in a teriyaki sauce and grilling. Broiling will also deliver a superbly satisfying crispy texture to the skin, like a sear, putting a "crust" on.

Each 5-pound box will have ~5 x 1-pound vacuum-sealed packs with 1-3 king salmon collars, but typically with 2 collars each. We aim for 1.0 pounds in each pack, but there is significant weight variation between collars, so the packs will range in size and it's conceivable you receive 4 larger packs or 6 smaller packs in the 5-pound box.
Like a chicken wing, there is cartilage and bones to work around and the best meat will take some work to get, but will be worth it. Below is what they look like raw and out of the package.
*Note that while we aim for 1.0-pound packs in each box, it is possible that with the odd shapes and sizes of collars, you might get 4 or 6 packs in a 5-pound box rather than 5 x 1.0-pound packs.
