Easy Salmon Casserole Recipe

Lisa’s Easy Salmon Casserole


1 package Easy Salmon
1 package of potato gnocchi
1 sliced zucchini
1 medium onion, diced
1 yellow bell pepper, diced
2-3 cloves of garlic, diced
10-12 Kalamata olives, sliced
1/4 cup of olive oil
1/4 cup red wine vinegar
1/4 cup fine bread crumbs
Parmesan cheese


Fry the salmon in a little oil until it is opaque. Then add the zucchini, onion, bell pepper, and garlic and cook until tender.
Prepare the gnocchi according to the package directions. Drain and place into a greased casserole dish.
Add the salmon and vegetables. Mix in the olive oil and vinegar. Sprinkle the bread crumbs and Parmesan cheese over the top.
Bake at 350 degrees for 20 minutes.
