Wild Alaska Pacific cod is a gold standard for high-quality,nutritious whitefish. Wild Alaska Pacific cod is a gold standard for high-quality, nutritious whitefish. Those of us in the fish business might call it “true cod” or P-cod (short for Pacific cod), but we find that the general public knows this fish just as “cod.” Or some say “true cod.”

You’ve certainly had Wild Alaska Pacific cod if you’ve had any fish n’ chips on the west coast, but this is an incredible fish to have on hand and versatile enough to be applicable in nearly any recipe imaginable. Roast, poach, steam, sauté, deep-fry, or just plain bake it.

Even people who don't like fish like salmon and tuna can enjoy Pacific cod in a number of different ways. Cod has a subtle, pristine briny flavor with a light sweetness. 

One of the best ways to prepare our Wild Alaska Pacific Cod is to sear it in a skillet or grill gently and squeeze a little lemon juice on it or top with garlic butter. Beyond fish n' chips and fish tacos, which are classic go-to recipes for cod, we really like searing cod and serving it with a Mediterranean tapenade of tomatoes, olives, capers and garlic. Another recipe that we have been enjoying is serving cod with chimichurri and roasted potatoes.

In terms of seasonings, stick with flavors that showcase cod's delicate sweet flavor without overpowering it, like lemon, dill, and herbs like parsley, thyme and chives. We frequently use herbs de Provence, which is a blend of thyme, rosemary, oregano and lavender.  

Chef Laura Cole of 229 Parks Restaurant and Tavern in Denali National Park notes that one of her “favorite dishes is to simply pan sear it with butter, and add olives, tomatoes, fresh garlic, fresh shaved fennel, and orange segments.” Pacific cod is “bright, vibrant, flavor filled and so satisfying.”  You can bake our cod, sauté it, fry it, but one thing’s for sure is that you cannot deny its universal appeal and it’s no wonder that we as humans have chased cod for over 1000 years.
