Roasted Cherry Tomato and Garlic Pizza with Herbed Halibut | Alaska Gold Seafood

Ingredients

Pizza

  • 1 lb. prepared pizza dough
  • flour, for dusting
  • 4 oz. ricotta
  • ¼ cup grated Parmesan cheese
  • fresh basil leaves

Roasted Cherry Tomatoes

  • 8 oz. cherry tomatoes
  • 8-10 whole garlic cloves, peeled
  • ¾ cup olive oil
  • salt and pepper

Herbed Halibut

  • 6 oz. Alaska Gold Easy Halibut Meat
  • salt and pepper
  • 1 tbsp. olive oil
  • 1 tbsp. unsalted butter
  • 1-2 garlic cloves, chopped finely
  • 2 sprigs thyme, leaves removed
  • 2 sprigs oregano, leaves removed

Instructions

Pre-heat oven to 400 degrees Fahrenheit. Cut pizza dough in half and place dough on a lightly floured surface.

Add cherry tomatoes, garlic, olive oil, salt, and pepper to a small baking dish and toss to combine. Roast tomatoes until they begin to burst, about 30 minutes. Once done, set aside and increase oven temperature to 500 degrees Fahrenheit.

Pat halibut meat dry and season with salt and pepper. Heat a non-stick skillet on medium and add olive oil, butter, and garlic. Cook garlic for 1 minute until lightly caramelized. Add halibut and chopped herbs, sauté 2-3 minutes until halibut is just cooked through, and set aside.

Roll pizza dough into two 9-10 in. circles and spread a thin layer of the roasted tomato garlic olive oil over dough, leaving a border for the crust. Top pizzas with roasted tomatoes and garlic cloves, dollops of ricotta, grated Parmesan cheese, and herbed halibut. Drizzle pizzas with more roasted olive oil.

Place pizzas on a pizza stone and cook until crust is lightly golden brown and cheese is melted, about 7 minutes. Once done, garnish with fresh basil leaves.
