Albacore tuna makes for a tasty protein that’s loaded with Omega-3s. What makes this Albacore Tuna Nachos Recipe special is the line-caught tuna from Seafood Producers Cooperative.
Ingredients
- 1 can of our Gourmet Albacore tuna
- 1 can black or refried beans
- 1 cup grated Jack cheese (and/or yellow cheddar)
- ¼ cup sour cream
- 1 finely chopped tomato
- 1 fresh ripe avocado
- 1 bag corn tortillas or nacho chips
- sliced jalapenos, black olives, sour cream, and salsa for garnish
Instructions
A casserole dish is fine for a smaller version of this recipe but use a full baking tray to double or triple the recipe for your next big party. A baking tray will offer plenty of surface area to spread layers of nacho ingredients. Shredded meat works best in nachos. Flake the albacore tuna by gently pulling apart the meat with a fork. Mix with sour cream.
Layer beans and albacore tuna mixture on bed of tortilla chips. Cover with sliced avocado, chopped tomato, and Jack cheese. Jack cheese and yellow cheddar melt the best and their mild flavor works best in nachos. Complete coverage guarantees that every chip has topping.
Get an ice cold beverage and bake until cheese is melting and beginning to brown.
Garnish with sliced jalapenos, sliced black olives, sour cream & salsa.
